The surface was deemed unsafe after two March concerts by the British singer.
Brisbane won the right to host the decider after an undefeated season.
The AFL had already pushed the start of the planned men's opening round clash between Gold Coast and Brisbane - also set to take place at Metricon Stadium - from 6:25pm to 7:05pm in order to accomodate a potential "curtain raiser" Grand Final.
Lions chief executive Greg Swann said the club had been "absolutely let down by the ground staff" at the Gabba.

"The AFL is profoundly disappointed the Gabba surface is not able to be presented for the showpiece match", McLachlan said.
"The Brisbane Lions have earned the right to host the inaugural NAB AFLW grand final in their home state and it is extremely disappointing that the first-ever women's grand final can not be at the home of AFL football in Brisbane", he said.
